Guacamole Revisited

A tweak on an old recipe for guacamole. Now, a blended margarita would be perfect! :)

Guacamole
(Yields 2 Snack Portions)

  • 1 ripe Hass avocado
  • 1 tbsp onion, diced
  • 1 scallion, chopped
  • 1 garlic clove, minced
  • 1 small vine-ripe tomato, diced
  • 1 jalapeno chili, seeded & chopped
  • 1/4 tsp ground cumin
  • 1/4 tsp cayenne powder
  • 1 tbsp fresh lime juice
  • 2 tsp extra virgin olive oil
  • 2 tbsp cilantro leaves, chopped
  • Sea salt & freshly cracked black pepper to taste

Roughly mash avocado in a bowl with lime juice. Fold in all the other ingredients and serve with chips.

This looks great! :) I'd love to make some at home, but Cris doesn't like 'guac; I can't determine if this is a bad or a good thing! =D

Thanks, Nina! My philosophy about food is: If it's good for me, then I will try to eat it at least 10 times. If I still hate it, then I will never have to eat it again. :) Besides, Cris needs to eat other stuff besides dim sum. Tee-hee.

Love this pic...I have recently developed a crazy apetite for guacamole! I eat 1 everyday at work, this recipe is quick and easy..there is a movement going on in my office now....everyone is eating guacamole!:)
